Reaper Salt
What is it: Salt shaker filled approximately 1/3 with crushed Carolina Reaper peppers and 2/3 kosher salt.
How to make: Roast the Reapers until they are completely dry. Crush them with a hammer. Mix with coarse kosher salt until fully blended.
When to use: any time a food needs a little bit of salt, and giving it heat…well…can turn it from a 7 into a 10.
